INGREDIENTS:
Pancetta
Sesame oil
Soya sauce
Ground ginger
Coriander
Spring onion
Sesame seeds
Ginger
Cinnamon
Chile
Black peppercorns
Star anise
Muscovado sugar
Oyster sauce
PREPARATION:
Marinate the pancetta all in one piece and vacuum-pack it
Bake in the oven at 70º for 16 hours
Cut into small cubes and seal the meat in a frying pan
Make the sauce with the soya sauce, oyster sauce and the sugar
Bathe the pancetta in the sauce and dish it up on a plate.
